Snickerdoodle S’mores Bars

I warn you, these snickerdoodle S’mores Bars are highly addictive! Gooey chocolate and marshmallows are sandwiched between two layers of sweet, sugary cookie dough for the flavor combination you didn’t know you needed. Bake a whole pan of s’mores cookie bars in just 35 minutes… I dare you to eat just one!!
S’mores Bars
Whenever we have friends and family coming over, I get all amped up about planning the menu… and I use it as an opportunity to test out new recipes!
The meal comes together in a snap, especially for a barbecue, but dessert dessert dessert. Does anyone else have this problem?
Nothing says cookout like roasting marshmallows, so s’mores are where I started.
And since I’ve already got recipes for cones, cake, and even hand pies, I knew I needed to come up with something truly unique!
One thought led to another, I circled back to cookies, and then it hit me… snickerdoodles!
Soft, chewy, not too sweet — the perfect complement to rich chocolate and marshmallow…
And that’s how this s mores bars recipe was born!!
Ingredient Notes and Substitutions
- All-Purpose Flour – Stick with the classic! Everyone’s got it in their pantries, and you have control over the leavening ingredients too.
- Unsalted Butter – This needs to be softened before you cream it with the sugar. Let it sit at room temp or microwave for 10 seconds at 50% power.
You can use salted butter for greasing the pan and making the marshmallow drizzle, but unsalted is a must for the dough. - Brown Sugar – I love the hint of caramel flavor this adds to snickerdoodle s’mores bars, plus it makes the dough extra tender and moist too!
- Cinnamon & Nutmeg – Yes, nutmeg!
Feel free to leave it out if you’re not a fan, but it helps balance out the sweetness from the snickerdoodle, chocolate, and marshmallow flavors. - Eggs – You’ll get a smoother s’more bars dough if these are at room temperature first. Simply let them sit on the counter for 30-45 minutes before getting started.
- Chocolate & Marshmallows – Use classic Hershey’s bars or your favorite alternative, so long as it melts easily.
I love mini marshmallows for this s mores bars recipe, but you could easily swap in marshmallow creme for something extra gooey!
It also doubles as the drizzle on top when softened in the microwave.
Tips and Tricks to Make Snickerdoodle S’mores Cookie Bars
- Use butter to grease your baking pan.
Instead of the usual nonstick spray, run a stick of butter all along the bottom and sides — and don’t forget the corners!
But that’s not all! Then, you’ll dust the buttered pan with granulated sugar so every inch of your s’mores cookie bars has that signature sugary coating.
- Press the dough gently into the pan.
You don’t want to press down too hard and compact it, or the cookie layers will be tough.
Sometimes, it’s easier to place the dough in the pan and add a layer of plastic wrap on top.
You can smooth out the dough without it sticking to your fingers, then remove the plastic before continuing.
And if you’re fine with a more rustic look, you can drop in small pieces of dough at the end instead of creating a smooth top layer.
Just be sure there aren’t any huge gaps between each piece.
- Cool completely before slicing.
Desserts that are baked in deep pans, like these s’more bars, cool faster on a wire rack than sitting flat on the stove or counter.
That doesn’t mean remove them from the pan! Just place the whole pan on top of the rack so cooler air can reach the bottom too.
Prep Ahead
- Grease baking pan
- Bring butter and eggs to room temp
- Mix cinnamon sugar topping
- Preheat oven to 350°F
Kitchen Tools You Will Need
- 8×8 Pan – It needs to have high sides or your s mores cookie bars will spill out over the top.
- Stand Mixer or large mixing bowl with a Hand Mixer to thoroughly mix the dough.
- Microwave-Safe Bowl – Not only does it make melting chocolate or marshmallows easier, but you can use it to quickly steam vegetables too!
Storing Leftover S’more Bars
Once cool, cover the pan of s mores cookie bars tightly with foil or plastic wrap, or transfer squares to an airtight container.
Keep these treats at room temperature for up to a week. I don’t recommend storing them in the fridge as they’ll get tough and hard to chew.
S mores Bars Recipe FAQ
Sure! They last for up to a week, though they’re best within a few days like any other dessert.
If you plan to make them in advance, wait to add the marshmallow drizzle until just before serving.
Be sure to grease the pan well with butter — and don’t forget a dusting of granulated sugar too!
Still having trouble? Run a knife between the pan and the bars, all around the edge, to help loosen the dessert.
You could also line the pan with parchment so it’s easier to lift the bars out, but you’d still need to add the butter and sugar for that crispy coating.
Sure! Assemble s mores cookie bars in a 9×13-inch baking pan and increase the baking time by about 5 minutes.
Keep a close eye to make sure you don’t under- or overbake them, though. The top of the dough should appear matte instead of shiny or wet, and it will spring back when gently pressed.

Snickerdoodle S’mores Bars
Ingredients
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon kosher salt
- 1 teaspoon cinnamon
- 1/2 teaspoon ground nutmeg
- 1 1/2 cups packed brown sugar
- 6 tablespoons unsalted butter, room temperature
- 2 large eggs, room temperature
- 1 tablespoons vanilla extract
- 4 hershey's bars
- 3 cups mini marshmallows
Topping
- 2 tablespoons granulated sugar
- 2 teaspoons cinnamon
Drizzle
- 1/4 cup mini marshmallows
- 1 tablespoon butter
Instructions
- Preheat oven to 350°F. Butter an 8”x8” baking pan and dust with sugar; set aside.
- In a medium bowl, combine flour, baking powder, salt, cinnamon and nutmeg. Whisk to combine. Set aside.
- Using an electric or stand mixer on medium speed; cream butter and brown sugar until light and fluffy. Add the eggs and mix to combine, scraping the sides of the bowl as necessary. Add vanilla. Mix until thoroughly combined. Reduce speed to low. Slowly add the flour mixture until just combined. Scrape sides and bottom of the bowl and stir.
- In a small bowl combine sugar and cinnamon to make topping. Stir to combine. Set aside.
- Spread half of the dough evenly into the prepared pan. Sprinkle marshmallows over top in an even layer. Add candy bar in an even layer making sure to cover the whole top. Spread remaining dough evenly on top of candy bars. Sprinkle sugar cinnamon evenly over the top of the batter.
- Bake for 25-30 minutes or until the surface springs back when gently pressed. Cool completely before cutting.
- Microwave marshmallows and butter in a heat safe dish, 30 seconds at a time until you have a smooth consistency. Drizzle over bars.
- Serve and enjoy!
