Fudgy Walnut Black Bean Brownies

Some days it seems a toddler could get a sugar high from just looking at a dessert too long! I realize we enjoy some pretty decadent foods, but we are always trying to find ways to balance that out. Desserts that are made without processed sugars are a great choice for us. Fudgy Walnut Black Bean Brownies are a perfect choice. Decadent and healthy!
Last month we were in Florida visiting my family. Mostly we went to see my mom who has been ill. While I was there I was cooking up some of her favorite healthy option dishes, adapted for her dietary needs. Vegetarian chili is a favorite of my moms. I made 3 batches and froze it in portion sizes. Veggie burgers were a hit with the whole family, honestly there were only a few left but they also were frozen for later.
It is amazing to make a healthy dish for people that don’t normally eat that way and they rave about it. You see the trick is to make healthy food so good that you feel satisfied. You feel like you aren’t missing out on anything. With savory food it needs to be flavorful and hearty if its mainstream counterpart is. That is the same with my Munchkin’s desserts. Whether I am ice cream made with bananas or cookies made with almond butter, it has to taste good.
While I was in Florida my mom told me about this brownie recipe she had gotten. I decided to give them a try. I was a bit skeptical, I have tried other black bean brownie recipes. They have been dry and tasteless. The first time I made these was in Florida and my whole sugar loving family went crazy over them. My dad even took a second one.
As soon as we got home Munchkin was asking for brownies, I decided to make these again. I changed it up to suit our tastes and the recipe is a keeper! Fudgy, decadent, rich and nutty. Oh, and you can freeze them. They thaw very quickly and it keeps you from eating the whole pan. ha!

Fudgy Walnut Black Bean Brownies
Ingredients
- 15 ounce can black beans, drained and rinsed well
- 3 tablespoons unsweetened cocoa powder, or raw cacao powder
- 1/2 cup old-fashioned oats
- 1/4 teaspoon kosher salt
- 1/3 cup pure maple syrup
- 2 packets stevia
- 1/4 cup coconut oil
- 1 tablespoon pure vanilla extract
- 1/2 teaspoon baking powder
- 1 cup walnuts, chopped, divided
Instructions
- Preheat oven to 350°F. Prepare an 8×8 baking pan with coconut oil.
- Combine all ingredients except the walnuts in a food processor or high powered blender. Blend until smooth. Fold in 1/2 walnuts.
- Pour into prepared pan. Sprinkle remaining nuts on top.
- Bake 15-18 minutes until cooked through. Remove pan from the oven, set on a cooling rack for 10 minutes.
- Serve and enjoy!

I really like dried fruit and mixed nuts. I'm going to give those Healthy Fruit and Nut Bars a try, and the brownies of course. They look super yummy!
