Keep it simple as a side to your favorite meats, or load them up for a full meal on their own!
And, the topping ideas are almost endless. With this smoked potatoes recipe, you’ll get crisp and fluffy results every time.

Smoked Potato Recipe Tips and Tricks
- Opt for Russet potatoes.
These all-purpose potatoes are often chosen for baking because of their thicker skin and buttery flavor.
You could certainly use red, Yukon Gold, or even fingerling potatoes if you prefer.
Adjust the cooking time since these varieties are much smaller, and be sure that each batch is uniform in size.
- Keep preparations simple.
Smoked baked potatoes don’t need much work — you really want the natural flavors to shine.
Wash the spuds, giving them a good scrub to remove any dirt, and dry thoroughly with paper towels.
Then place them on a sheet pan, pierce all over with a fork, and coat with olive oil (or your favorite neutral cooking oil) and kosher salt.
- Choose the right wood chips.
Experimenting with different types of wood chips is part of the fun of using a smoker!
The type you use will really make a difference in the flavor of your smoked baked potato.
Our favorite is a blend of oak, maple, and hickory, but fruit woods like apple and cherry are popular as well.
For a really smoky flavor, go with mesquite! on my pellet smoker.
Best Temp and Cooking Time for Baked Potato on Pellet Grill
When it comes to making a smoked baked potato, time and temperature are the most important things to consider.
Of course, there will be slight variations depending on the type of smoker you have and the size of your potatoes.
But, for the most part, you will want to set your smoker to 375°F. It will take about 15 minutes to preheat.
After it preheats, smoked baked potatoes will take about an hour to cook. Test them by sticking a fork in them — if it goes in easily, they’re done!
If you already have meat smoking at a lower temperature, you can smoke a baked potato on the pellet grill for 2 to 3 hours at 225°F as well.
Toppings for Smoked Baked Potato
Your imagination is the only limit when it comes time to dress up your smoked baked potatoes!
- Stick with the classics. You can never go wrong with butter, sour cream, chives, and shredded cheese.
- Add some protein. Crumbled bacon is a popular topping, but buffalo chicken and pulled pork really make this smoked potato recipe a full meal!
Black or pinto beans are a great vegetarian alternative. - Load up on veggies. Sauteed mushrooms, caramelized onions, steamed broccoli, and more!
- Don’t forget sauces! Who can resist a gooey cheese sauce?
Alfredo would be dreamy on smoked baked potatoes, or you could even drizzle on some broccoli cheddar soup — we won’t tell!
Smoked Potatoes Recipe FAQ
No need to boil or steam your spuds beforehand! Simply follow the preparation directions in this smoked potato recipe, then get them on the pellet grill.
All you really need for smoked baked potatoes is kosher salt and maybe some black pepper. That said, garlic powder makes everything better and Montreal Steak Seasoning is a popular choice! Or, sprinkle on your favorite taco seasoning before serving.
Ditch the aluminum foil when making this smoked potatoes recipe for maximum flavor and texture! Foil ends up trapping moisture and steam, so potatoes end up tasting boiled and the skin doesn’t crisp properly. You can certainly use foil if you’re worried about cleanup, but we wouldn’t recommend it.

Smoked Baked Potatoes (Pellet Smoker Recipe) + Video
Ingredients
- 4 russet potatoes, scrubbed clean
- 2 tablespoons olive oil
- 2 tablespoons kosher salt
- toppings such as butter, pepper, sour cream, and thinly sliced chives
Instructions
- Preheat the smoker to 375°F. Choose your favorite wood, I am using my favorite blend of oak, maple and hickory on my pellet smoker.
- Place the potatoes on a sheet tray or work surface and use a fork to pierce the skin all over.
- Coat in the olive oil and rub the salt all over the potatoes.
- Once the smoker is to temp (about 15 minutes), place the potatoes directly on the grate. Depending on the size, check at an hour and the potatoes should be done. You know they are done when you can stick a fork in it all the way to the center.
- Use an oven mitt to hold the potato and give it a little squeeze to help separate the potato from the skin. Then immediately cut them open. Use a knife to slice the potato long ways down the middle (about 3-4 inches) and then do the same thing crossways. use a clean kitchen towel and both hands to push them open from each end.
- Immediately top with fixin’s! Enjoy.
