Chipotle Barbacoa

Chipotle Barbacoa is the Mexican barbecue of my dreams. Seared beef is slow-cooked in a spicy adobo sauce, creating perfectly moist and tender shredded beef with an incredible combination of flavors.

Salt | Chuck Roast | Olive Oil Bay Leaves | Apple Cider Vinegar Garlic | Cumin | Oregano | Pepper Clove | Chipotle Peppers | Broth Adobo Sauce | Lime Juice

KEY INGREDIENTS

Trim fat off chuck roast, rinse in cold water and pat dry. Cut into 8 chunks. Sprinkle all sides with salt. Then blend the sauce ingredients.

Warm Dutch oven, add oil and sear all sides of the beef. Once seared, remove from the Dutch oven and place it in your slow cooker. Set to high.

Pour the sauce over top. Add bay leaves and cook for 5-6 hours on high. Shred beef and stir to completely coat in sauce. Cover and cook for 1 more hour. Then assemble your burritos.
