Mexican Lasagna with beef, tortillas, veggies, and cheese puts a unique twist on the popular pasta dish. This taco lasagna recipe is SO good!

Lean Ground Beef | Olive Oil Onion | Paprika | Cumin New Mexico Chile Powder Fire Roasted Diced Tomatoes Black Beans | Sweet Corn Enchilada Sauce | Tortillas Pepper Jack Cheese | Black Olives Colby Jack Cheese | Scallions

KEY INGREDIENTS

Heat olive oil, add beef, onion and spices and brown for about 5-7 minutes. Then stir in tomatoes, beans and corn.

Spread some of the enchilada sauce over the bottom of a baking pan, then lay tortillas over the sauce, slightly overlapping.

Next, spread half of the beef mixture over the tortillas, then place a layer of tortillas and enchilada sauce and sprinkle the cheese on top.

Scatter the green chiles over the cheese and repeat the layers. Then garnish with olives and scallions and bake for 10-15 minutes.
