Pat the chicken dry, then mix all the spices together and generously rub the chicken with the spice mix.
Place the leg quarters directly onto the smoker grates and smoke for 2-3 hours.
Serve with delicious ranch mashed potato salad, or smoke corn on the cob at the same time as the chicken!
