Keto Brussel Sprouts

Roasted vegetables are always my go-to side dish — they’re incredibly easy to make, are loaded with vitamins, and taste pretty great too. 

There are so many different ways to prepare and serve roasted veggies, which is half of the reason why I never get tired of them! The other half?

You usually just need to season, toss, and pop in the oven. Seriously, this is so simple you guys!

My keto Brussel sprouts are the latest addition to my ever-growing collection of roasted vegetable recipes.

They’re made with butter (low carb!), garlic, and a handful of seasonings… and that’s it! 

Sprouts are an excellent low carb vegetable choice and are super keto-friendly. Low carb garlic butter Brussel sprouts never tasted so good… or were this easy to make!

Ingredient Notes and Substitutions

  • Brussels Sprouts – I like fresh best for this keto Brussel sprouts recipe — because we’re baking our sprouts, frozen ones would steam rather than roast due to all of that excess moisture. 

    If you do have to use frozen, I recommend letting them thaw in the fridge overnight to help remove extra liquid.
  • Garlic – You need plenty of garlic to give your sprouts that yummy garlic butter flavor! Use full, fresh cloves here, not the jarred stuff.
  • Butter – You may not know this, but butter is surprisingly low carb! It’s actually one of the best fats you can include in a keto diet.

    You’ll need to melt yours first to create your garlic butter.
  • Parmesan Cheese – Also a great low carb option! Plus… Parmesan just makes everything better.

    I love adding it to savory meals, and find that it pairs super well with the garlic and sprouts!
  • Seasonings – You don’t need much to help your sprouts shine! I add cayenne pepper for a bit of heat, smoked paprika for a smoky flavor, and simple salt and pepper.

Tips and Tricks to Make Perfect Garlic Butter Brussel Sprouts

  • Charred sprouts taste better!

To get keto Brussel sprouts with the best flavor and texture, your goal should be to char your sprouts. 

You can help the process along by making sure to pat the sprouts dry with paper towels, placing them in a single layer on the baking sheet, and arranging them cut side down.

All of the above will give you perfectly crispy, almost-burnt-looking, golden brown results! 

  • Make your garlic butter even more flavorful.

You can amp up the flavor in your Brussel sprouts with garlic butter by satutéing the cloves in melted butter before tossing it with the other spices. 

Cooking the garlic will release more of its flavor and add more of a garlicky punch to your keto Brussel sprouts.

  • Use even more butter if you’d like.

I only use about ½ teaspoon of melted butter to keep things lighter. Try increasing the amount to 1 tablespoon for an even richer flavor.

Remember that butter is low carb, so you have a little wiggle room for adding more to Brussel sprouts with garlic butter, even if you are keto!

  • Add the cheese at the end of roasting for melty results.

To make this keto Brussel sprouts recipe as easy as possible, I usually simply add the Parmesan cheese on top just before serving.

If you want the cheese to be a bit more on the melty side, add it to your sprouts in the last 2-3 minutes of baking time.

It will melt up super nicely, plus you won’t have to worry about it burning if you add it at the end!

Prep Ahead

  • Preheat the oven to 375°F
  • Prepare your baking sheet
  • Halve the sprouts
  • Shred the Parmesan

Serving Suggestions 

Enjoy your garlic butter Brussel sprouts as a side dish, snack, or even in a salad! 

They would be a welcome addition to this broccoli bacon salad, and pair wonderfully with mains like roast beef, lemon chicken, and lemon pepper salmon.

To keep things keto, pair your sprouts with some cauliflower rice and a nice big steak!

Storing and Reheating 

You can store leftovers in an airtight container in the fridge for up to 5 days. Use your microwave or a skillet on the stovetop to reheat.

I don’t typically recommend freezing roasted sprouts. The act of freezing, thawing, and reheating will cause the crispy texture to become mushy. 

This keto Brussel sprouts recipe is so easy to make and comes together so quickly… it’s best to make it fresh!

Keto Brussel Sprouts Recipe FAQ

Can I eat Brussels sprouts on keto?

Yes! Brussels sprouts are one of the best low carb, keto vegetable options. On their own, sprouts have about 4-5 net carbs per serving, so they won’t mess with your carb count too much!

Should I soak Brussels sprouts before cooking?

It depends on the cooking method you use, and how soft you want your sprouts to be! I don’t find it necessary to soak when baking — in fact, I like a little bite to them myself. 

However, if you’re making sprouts in the air fryer, you may want to soak them first to help the cooking process along.

Why won’t my Brussels sprouts get crispy?

You likely didn’t set your oven to a high enough temperature. Make sure to roast your Brussel sprouts with garlic butter at 375°F. 

They may also simply need more cooking time. All ovens are different. If your sprouts aren’t crisping up to your liking, let them roast a bit longer!

Ingredients
 

  • 1.5 pounds fresh Brussels sprouts
  • 4 garlic cloves
  • 1 teaspoon cayenne pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon melted butter
  • 1/3 cup shredded parmesan cheese

Instructions
 

  • Preheat the oven to 375°F and prepare a large baking tray.
  • In the meantime, prepare the brussel sprouts. First, chop them into halves and place them in the baking tray. Set it aside.
  • Make the garlic butter by mixing melted butter, minced garlic, smoked paprika, cayenne pepper, salt and ground pepper. Then, use this mixture to brush brussel sprouts from both sides.
  • Bake them for 15 minutes, or until golden from one side and then flip them over the other side for another 10 minutes.
  • Serve warm with shredded parmesan cheese on top. Yum!
