Meat Lovers Omelette
When it comes to breakfast, I can often find myself in a rut. I don’t have too much time in the mornings.
Like so many of you, I have to get Munchkin up and ready for school or whatever activity she has going on that day, and make sure Chad has everything he needs too.
It’s that busy mom and wife life for ya!
As a result, I usually grab some cereal, a granola bar, a Pop-Tart… maybe a toasted bagel if I’m lucky!
Well, you guys, I’m officially sick of rushing through my morning meal! And what’s the best way to motivate myself to cook right when I wake up?
A brand new breakfast recipe of course!!
This meat lovers omelette is substantial enough to get me through until lunchtime, and it doesn’t take too much time to make either.
In fact, it’s ready in just about 20 minutes in total. Total score in my book.
Plus, you can use this recipe as a base and make it with whatever fillings you want. Another total score!!
Ingredient Notes and Substitutions
- Eggs – As a note, I usually use 2-3 eggs per omelet per person. You could use more if you’d like, but you’ll likely have to use a larger skillet to pull it off.
- Heavy Cream – I’m using cream instead of milk here — it’s richer, smoother, and (almost unbelievably) low carb too.
- Butter – I opted for unsalted grass-fed butter in my meat lovers omelet.
You can use your preference but try to use unsalted when you can to reduce the overall amount of sodium. - Bacon – Make sure your bacon is cooked before you get started.
I’m a huge fan of baking bacon in the oven, but you can make yours in a skillet or even in the air fryer if you want to. - Sausage – I cooked the entire package of breakfast sausage and just refrigerated everything I didn’t use in this recipe for later.
It was great in these breakfast sliders and this loaded baked egg casserole! - Cheddar Cheese – I love cheddar cheese in this keto omelet — and you better believe I shredded it myself!
Pre-shredded bags contain a coating that keeps the cheese from sticking together… but also prevents it from melting properly. - Garnish – Get creative here! You can add Italian parsley, shredded cheese, bacon, full-fat sour cream, chives, sliced avocado, or even hot sauce!
Tips and Tricks to Make the Perfect Keto Omelet
- Prep everything beforehand.
Once you get started this meat lovers omelette recipe moves super quickly!
Having everything chopped, cooked, and shredded before you begin will help make everything go a lot smoother.
You can even whisk the eggs and cream together while the sausage cooks to save even more time.
- Use a nonstick pan and keep the temp low.
Creating the perfect keto omelet is a bit of an art form! It’s important to use the proper equipment and the right temperature.
A nonstick pan and low temp will keep the eggs from burning and sticking to the pan — both are essential for a clean fold!
- Resist the urge to overcook.
The key to a fluffy meat lovers omelette is to cook it until just set. If the eggs start to go dry, the whole thing will be too tough and could end up cracking when you fold it.
One way to determine the right time to remove the pan from the heat is to keep an eye on the cheese. Once it’s melted and gooey, you’re good to go!
- Add other fillings!
You can keep the bacon and sausage and add veggies like mushrooms, bell peppers, spinach, asparagus, or onion to the mix.
You could also make it even more carnivore-friendly and add some ham.

- Quality Knives and a big solid Cutting Board make prepping a breeze and are well worth the investment.
- Box Grater – As much as I love buying bagged shreds because it’s easier, freshly grated cheese melts down so much smoother and tastes better too.
- Mixing Bowls – I like to have a variety of sizes on hand, and this set has them all.
- Non-stick Skillet – Everyone needs a good skillet. I use this almost daily for everything from cooking eggs to browning chicken and ground beef.
- A sturdy silicone spatula can be used for scraping, stirring, and smoothing and is easy to clean too!
Serving Suggestions
I’ve been known to enjoy this meat lovers omelette for breakfast, lunch, or dinner!
If I have it in the morning, I’ll usually pair it with some crispy Air Fryer Breakfast Potatoes and maybe a little fruit salad.
For lunch, it pairs well with a simple garden salad with a flavorful dressing. And if breakfast is what’s for dinner, I’ll do some potatoes on the grill and a veggie salad!
Storage and Reheating
I typically only make as much as I know I’ll need, but if you do have leftovers, you can store them in an airtight container in the refrigerator for 2-3 days.
Reheat in the microwave in 30-second bursts until warmed through.
Or, you can give your meat lovers omelet new life on the stovetop — I love adding a little extra cheddar on top so it’s nice and cheesy.
Place a pat of butter in a nonstick skillet and heat over medium-low. Add the omelet when the butter has melted and heat on each side for 1-2 minutes.

Yes. Because the eggs will cook up super quickly, it’s important to cook both the bacon and sausage before getting started.
You’ll find instructions on how to make the sausage on the recipe card, but I left the bacon piece of the puzzle pretty open. I know not everyone likes to make theirs the same, so you can cook yours however you like!
You could technically use either — or heavy cream like I do in my meat lovers omelet recipe! Water will give the eggs a much fluffier texture, while milk or cream will make the whole thing richer.

Keto Meat Lovers Omelette
Equipment
Ingredients
- 2 large eggs
- 1 tablespoon Heavy cream
- 1/4 teaspoon salt
- pinch pepper
- 1 tablespoon unsalted Grass-fed butter
- 2 slices cooked bacon, chopped, divided
- 1/4 cup cheddar cheese, freshly shredded, divided
- 2 tablespoons ground breakfast sausage
Garnish:
- Italian parsley, chopped
- shredded cheddar cheese
- cooked bacon, chopped
Instructions
- In a medium bowl, whisk together the eggs, heavy cream, salt, and pepper until well combined. Set aside.
- Spray a nonstick skillet with cooking spray. Heat breakfast sausage over medium-high heat. Break the sausage up with a spatula and cook until no pink remains (about 8-10 minutes). Drain grease and set aside.
- In a small, non-stick skillet (8-inch), melt the butter over medium low heat. Move the pan in a circular motion to coat the pan.
- Add the egg mixture to the pan over low heat until the edges of the eggs begin to set. Use a spatula to pull the edges of the egg to the center, allowing the uncooked egg to contact the pan. Repeat around the edges of the pan until the eggs are slightly set all over, but still a bit undercooked.
- Add 2 tablespoons of shredded cheese, 2 tablespoons of cooked sausage, and 2 tablespoons of bacon to one half of the omelette. Turn off the heat.
- Using a spatula, fold the empty half of the omelette onto the filled side. Cover with a lid and continue to cook for an additional 30 seconds to a minute, until cheese is melted.
- Tilt your pan and gently push the omelette onto your plate. Top with remaining cooked bacon and cheddar cheese, as well as chopped Italian parsley. Serve warm and enjoy!
