These No Bake Brownie Bites are keto friendly, gluten free, and sugar free!! Basically everything you’ve ever wanted in a healthy brownie bites recipe, they’re full of chocolate flavor with a touch of peanut butter. Similar to edible cookie dough, it’s the perfect dessert for parties, at-home snacking, or on-the-go goodness!
No Bake Brownie Bites
I’ve never said no to a no bake, chocolate-filled dessert, and these no bake brownie bites certainly fit that bill!!
Made with a handful of wholesome ingredients, you don’t even need to turn on your oven for this one. In fact, you don’t need any fancy equipment either.
With a mixing bowl, a baking sheet, and a cookie scoop, you’re off to the races!
Something else to love? Theses are sugar free and gluten free brownie bites too! They have the texture of firmer edible cookie dough… not overly sweet but chocolatey and satisfying. Are you drooling yet?!
These healthy brownie bites are just the ticket for a wholesome dessert option that’s SUPER simple to make.

Ingredient Notes and Substitutions
- Peanut Butter – I’m using sugar-free peanut butter as remember… I wanted to keep this recipe sugar-free too!
You can use whatever brand you’d like — I’m partial to Jif or Skippy because they aren’t overly oily. - Erythritol – You can technically use whatever sugar substitute you like here, I just happen to always have erythritol on hand. Some other options include monk fruit, stevia, or allulose.
- Cocoa Powder – Again, go for unsweetened here! Most of that brownie flavor comes from the cocoa powder.
Try to use something high-quality for the most chocolatey results. - Almond Flour – The key to making these low carb and naturally gluten free! Use finely ground options for the best texture.
- Dark Chocolate Chips – You can omit these if you want, but I love the added crunch they bring to the mix!
I like Lily’s brand best! It doesn’t have any sugar and still tastes great.
- Vanilla Extract – For a touch of sweetness. Vanilla balances out all of the other flavors, but don’t worry, these no bake brownie bites are definitely chocolatey!!
Tips and Tricks to Make Perfect Healthy Brownie Bites
- Don’t be afraid to use your hands.
This is one of those recipes where you may have to get your hands dirty!
You can start mixing the ingredients with a whisk, spatula, or wooden spoon… but you may need to use your hands to fully mix everything together.
Just remember to wash your hands first before you get started!
- Overly sticky batter?
No problem! If you find that your brownie bite batter is a little on the sticky side, add some extra cocoa powder.
On the other hand, if it feels too thick, you can add a bit of water to thin it out.
- Use a cookie scoop.
You can roll your no bake brownie bites with your hands as well, but I typically use my handy dandy cookie scoop.
This way, you have perfectly shaped bites without much of an effort!
- Refrigerate before serving… or not!
I find that these keto brownie bites have a nice and firm texture without any chilling needed. Such a plus if you plan to whip these up quickly before having guests over!
That said, if you want your bites chilled, you can absolutely let them firm up a bit more in the fridge.

- Cookie Scoops – Great for meatballs, cookies, ice cream, and portioning out leftovers. I’ve had this set for years and use them all the time.
Serving Suggestions
As mentioned you can enjoy gluten free brownie bites as soon as you’re done forming them, or you can let them chill in the fridge for a bit.
I love the idea of serving these as a part of a larger dessert and cookie spread around the holidays to give folks a gluten and sugar free option.
Just remember to include a peanut butter free one too, like these fudgy, cocoa-filled one bowl brownies.

Storing and Freezing Leftovers
Keep gluten free brownie bites in an airtight container in the fridge for up to 3 days.
For longer storage, these freeze well! Place on a parchment-lined baking sheet and then flash freeze until solid.
Transfer to a freezer-safe bag and freeze for up to 3 months. Let them thaw overnight in the fridge before enjoying.

These are keto friendly thanks to the almond flour! The carb count is super low — each bite contains 3 grams of net carbs.
This could be due to overmixing, or you could have used the wrong type of almond flour! Be sure to incorporate the ingredients until just combined, and opt for finely ground flour. Anything coarser will result in crumbly bites.
You don’t have to worry about cutting anything with my healthy brownie bites recipe! I form them into bite-sized pieces from the start so they’re easy to grab on the go.
Absolutely! I keep this recipe short, sweet, and straightforward, but you can certainly add some fun extras if you’d like.
Chopped nuts are always welcome, and you could even add some instant coffee for a more intense chocolaty, coffee flavor. A pinch of cayenne pepper will add a touch of spicy heat!

Ingredients
- 1/2 cup sugar-free peanut butter
- 1/3 cup powdered erythritol, or preferred sugar substitute
- 1/4 cup unsweetened cocoa powder
- 3 tablespoons fine ground almond flour
- 3 tablespoons Lily’s dark chocolate chips
- 1 teaspoon vanilla extract
- pinch salt
Instructions
- Mix all of the ingredients together in a medium bowl, you may need to use your hands to fully mix and shape into a ball.
- Use a medium cookie scoop to portion out the dough and drop it into balls on a parchment line baking sheet.
- Enjoy immediately or store in an airtight container for up to 3 days.
