How To Make Pecan Pie Bombs
Once the frozen dinner rolls have thawed to room temperature, you can make this dessert in just 30 minutes!
Just spoon some homemade filling into the center of the flattened rolls and pinch them shut.
Place them in a single layer in a baking dish and top with melted butter and brown sugar. This gives them a lovely caramelized crust.
Then, bake until soft and fluffy and top with more pecans and caramel drizzle.
Helpful Tips and Tricks
- Thaw the rolls first! Make sure to take out the frozen dough well before starting the recipe. It’s perfectly safe to let them thaw on the counter, or pop the package in the refrigerator the night before so you don’t forget.
- Flatten the dough. Use your hands to stretch out the dough into a flat disc, similar to pizza crust. You can also use a rolling pin or even a tortilla press.
- Make your own caramel sauce. All you need are 4 ingredients and 6 minutes to make a delicious drizzle right at home!
- Need to make these in advance? Once the mini pecan pie desserts are in the baking dish, cover tightly with plastic wrap or foil and refrigerate for up to 24 hours. Then, add the butter and brown sugar to the top and bake as directed.

- 8×8 Pan – Really, any 2-quart baking dish will work just fine. Or use a baking sheet if you want individual bites instead.
- Mixing Bowls – I like a variety of mixing bowls and prep bowls and this set has them all.
- Small wooden dowel rolling pin – Perfect for small jobs like making TSRI’s bombs! It’s also great for noodles, dumplings, and turnovers, and it even has a ruler on the rolling pin.
FAQ – Common Recipe Questions
Do pecan pie bombs need to be refrigerated?
Once baked, it’s best to keep these chilled if you won’t be eating them all right away.
Keep them in a sealed container in the refrigerator for 3 to 5 days or freeze for up to 6 months.
Reheat in the microwave using half power in bursts or in the oven at 325°F until warmed through. If frozen, allow them to thaw in the refrigerator before reheating.
What is the best dough to use for dessert bread?
I like to use Rhodes frozen rolls to make all of my bomb recipes, but any brand should work just fine as long as they aren’t seasoned or flavored.
You can also use refrigerated tubes of dough for biscuits, crescents, or pizza if you’d like! Fresh homemade dough will also work if you have the time to make that first.

Pecan Pie Bombs + Video
Ingredients
- 12 white dinner roll dough balls, thawed
- 1 1/2 cups pecans, chopped, divided
- 1 large egg, lightly beaten
- 2 tablespoons granulated sugar
- 1/4 cup light corn syrup
- 4 tablespoons unsalted butter, melted, divided
- 4 tablespoons light brown sugar
- 1/2 cup caramel sauce
- Flour for dusting
Instructions
- Preheat the oven to 350°F. Take the frozen dinner rolls out to thaw.
- In a medium-sized bowl add 1 cup of the pecans, egg, granulated sugar, corn syrup, and 2 tablespoons of the butter, stir to combine.
- Grease an 8×8 baking dish with cooking spray and set aside.
- Once the dough is thawed, lightly dust a clean work surface and roll out or use your hands to form the dough balls into a flat circle about 4 inches wide.
- Add about 1 tablespoon of the pecan filling. Gather the dough around the filling and pinch the seams together. Gently roll into a ball and place it into the baking dish seam side down.
- Repeat with the remaining dough balls and filling. Brush the tops with the remaining 2 tablespoons melted butter. Sprinkle the brown sugar on top. Bake for 30-35 minutes until golden brown.
- While the bombs are baking, add the remaining ½ cup of the pecans and the caramel sauce to a small bowl, stir to combine. Let the bombs cool slightly and add the caramel topping to serve.
