Red, White and Blue Cheesecake Salad comes together so easily, and is always a hit at picnics, potlucks and of course, Memorial Day and the 4th of July!
With fresh fruit and a lusciously creamy cheesecake filling, it’s the perfect dessert salad!
I don’t know about you, but I love my coffee, so I always have creamer in the house.
I have found this to be an amazing convenient ingredient in cooking and baking sweets.
So, of course, when I started thinking about creamy fruit salad I thought of using vanilla flavored coffee creamer!
I absolutely love fresh fruit and I am completely hooked on fruit salad.
With summer right around the corner and fresh berries calling to me at the market, I could think of nothing more perfect than a berry banana fruit salad.
But, not just any fruit salad. A cheesecake salad.
Red White and Blue Cheesecake Salad
Rich and creamy cheesecake filling made with cream cheese, pudding and my favorite creamer.
The creamer lends a richness and creaminess to the cheesecake filling and the perfect touch of sweetness.
The filling is folded into fresh strawberries, blueberries, and bananas to create the most amazing red white, and blue cheesecake salad you have ever eaten.

Recipe Tips
- Do not pour all of the creamer into the cream cheese at once. It will get clumpy and no matter how long you beat it, it will stay that way. Trust me on this one.
- If the cream cheese and pudding mix get too thick, add in a splash of the cream to loosen it up. Then proceed with the recipe, minus the splash you already used.
- If you are out of creamer you can substitute: 1 cup heavy cream, 1/4 cup powdered sugar, and 2 teaspoons vanilla extract.
Make Ahead Instructions for Red White and Blue Cheesecake Salad
To make the cheesecake salad ahead of time, prepare the cheesecake mixture and refrigerate in a bowl.
Then, combine all of the fruit in a separate large bowl. Cover both bowls and refrigerate.
Before serving, drain any excess liquid from the fruit and then fold the cheesecake filling into the fruit.

Red White and Blue Cheesecake Salad
Equipment
Ingredients
- 8 ounces cream cheese
- 3.4 ounces instant cheesecake pudding mix, unprepared
- 1 cup liquid French vanilla creamer, *See Notes
- 1 pound strawberries, cut into bite-size pieces
- 12 ounces blueberries
- 1/4 cup lemon juice, ~1 large lemon
- 4 large bananas, peeled and sliced
Instructions
- In a medium tall bowl, (I use my 8 cup measuring cup), using an electric mixer, whip cream cheese until it becomes smooth. It may bind up in the beaters, but continue as is and it will loosen up. Add the dry pudding mix and continue beating until well combined.
- With the mixer running on low speed, slowly add the creamer, 1 tablespoon at a time, to the cream cheese mixture. Be sure the creamer is completely combined before adding another tablespoon.Repeat until all of the creamer has been added to the mixture and the mixture is completely smooth. Refrigerate while you prepare the fruit.
- In a large bowl, combine lemon juice and bananas. Stir to coat bananas completely; pour off any excess lemon juice. Add strawberries and blueberries. Gently stir to combine. Fold the cheesecake mixture into the fruit.
- Serve immediately, or cover and refrigerate until ready to serve.

Can I make this the night before, and not combine the fruit & pudding mix until the next day?

I just made this, and it was just too sweet for my family's taste. It still taste good, but just too sweet. I'm making this for July 4th, so I'm glad I found this out first. They didn't have cheesecake pudding, so I used Banana Cream Pudding instead. For the 4th, I will be using half whipping cream, and half of the creamer, to cut some of that sweetness from the creamer. Also, I will be using 2 8oz packages of cream cheese instead of one. I also used a lot more strawberries, and blueberries, so the berries wouldn't be drowning in the sauce. I plan on crumbling gram crackers, and doing some layers with it to make it more like a deconstructed cheese cake.
I haven’t tried it yet but the changes you plan to make sound like something our family would enjoy also. Do you know about how much of the fruit you added as well as amount of Graham crackers?

Thanks for posting this. I’m trying to find an alternative to ice cream every night which I know is terrible for me. I can’t wait to try this it sounds perfect.
Fantastic recipe. I doubled all the fruit and would have added more if I had more on hand. The cream mixture makes a lot so adding the additional fruit helped balance it out. Otherwise this is a wonderful fruit dish. Cannot wait to share it at a dinner tonight.
I love this recipe! It’s so summery and light! I’ve made it with and without the cream cheese (I have a friend who is lactose intolerant) and it turned out great both ways. I also used a white chocolate mocha flavored creamer, and it added a new layer of flavor. There have been raves all around every time I’ve taken it to a pot luck.
Can I substitute sugar free creamer, light cream cheese and sugar free pudding mix for the regular?
I’m allergic to lemon do I need to use it or something else with the banana?
I have made this recipe twice. It was delicious both times. Every one who ate it, loved it. If you are going to make it ahead, I would not put the bananas in. They will turn brown by the next day, even though I put them in lemon juice. The second time I made it, I left the bananas out. It was still delicious!
no matter how I follow the instructions to the T I still can’t get it pudding mixture right.
Instead of using lemon juice can’t I just soak my bananas in fruit fresh? Or is there another reason for soaking the bananas in lemon juice?

I make it a bit different every time. A cup of creamer makes it a bit sweet for my taste, so I usually do half creamer and half milk. I use different puddings (white chocolate and cheesecake are the favs) I’ve even mixed the 2 in a double batch. I use different creamers such as the Great Value blueberry cobbler 🤗 Thank you so much for sharing this recipe!! It’s heavenly as written and fun to expirament with.

I mixed the cheesecake pudding mix with the creamer in a small bowl. I whipped up the cream cheese in a larger bowl, then added the pudding mix to the cream cheese with no issues of clumping. It was completely smooth. 👍🏻
