You can feel good about feeding this meal to your family because it’s made entirely with fresh ingredients and a handful of spices.

Plus, this recipe for air fryer potatoes and sausage is very hands-off which leaves you time to help with homework or get other things done.

Ingredient Notes and Substitutions

  • Sausage Links – Use your favorite variety! This recipe works with pork, beef, or chicken sausage, and kielbasa, and you could even try out different flavors if you’d like.

    Note that it is much easier to use packaged sausage from the deli case than fresh sausages from the butcher or meat counter.

    Because they’re fully cooked, they’re a lot easier to slice!
  • Vegetables – I love to add bell pepper, onion, baby potatoes, and broccoli to air fryer sausage and potatoes, but this dish is incredibly versatile.

    Swap the broccoli for cauliflower, zucchini, carrots, or snap peas, and use whatever color bell pepper your heart desires!
  • Olive Oil – A little goes a long way to help brown sausage and potatoes in the air fryer. I love cooking with olive oil, but vegetable or avocado oil are good options too.

    Just be sure to use something that has a high smoke point.
  • Seasonings – Most sausage is already seasoned, so you don’t need much more than salt, pepper, and some Italian seasoning.

    For some kick, add extra pepper or some red chili flakes to the mixture (or toss in chopped jalapeño).

    You can also swap in different dried herbs or sprinkle some Cajun seasoning over air fryer sausage and potatoes.

    And you can never go wrong with garlic powder and onion powder!

Tips and Tricks to Perfectly Air Fry Sausage and Potatoes

  • Chop all of the ingredients so they are similarly sized.

This guarantees that everything will cook evenly and be ready at the same time. If some potatoes are larger than others, you may want to quarter them.

Just be careful with the broccoli! The florets really start to shed the smaller you chop them.

  • Toss everything in oil and seasoning before adding it to the basket.

You want everything to be well coated in oil, and the seasonings should be evenly distributed. There’s nothing worse than getting a ton of pepper in one bite!

  • Stir at least once halfway.

Mixing everything up around the halfway mark ensures that each piece of food is cooked through and browned evenly.

It wouldn’t hurt to stir a few times — it does take about 50 minutes to cook air fryer potatoes and sausage, after all.

Just be careful about opening the air fryer too often or it’ll take even longer!

  • Make cleanup a little bit easier.

If your model allows, line the bottom of the basket with some parchment paper before you air fry sausage and potatoes.

Leave space around the edges for better circulation or poke a few holes to line up with the ones in the metal.

Serving Suggestions

While air fryer sausage and potatoes is a wonderful meal on its own, you could spoon it over some rice to make it more filling.

Adding a starch is also a helpful way to stretch the meal further when you have a lot of people to feed!

Some homemade Texas Roadhouse Rolls or Air Fryer Garlic Knots would be a wonderful side dish as well.

Storing and Reheating Air Fryer Potatoes and Sausage

Allow any leftovers to cool, then transfer them to an airtight container and refrigerate for 3 to 4 days.

Because air fryer sausage and veggies will keep for several days, this recipe is a great option if you’re meal-prepping.

Spoon out one serving for dinner and divide the remainder evenly between your containers. Adding some cooked rice should get it to last the rest of the week!

Reheat sausage and potatoes in air fryer at 350°F until warmed through, or in the microwave.

Air Fryer Sausage and Veggies FAQ ‌

Can I use frozen vegetables instead?

Yes, but you will need to thaw them first or increase the overall cooking time to ensure they are warmed through.

It may also help to chop frozen broccoli into smaller pieces so they don’t take as long to cook.

Either way, frozen veggies will come out softer and less crisp than if you air sausage and potatoes with fresh vegetables.

Is there a way for this air fryer meal to be ready faster?

You can reduce all of the ingredients by half so it’s done in 20 to 25 minutes, but then it will only serve two people.

Or, make air fryer sausage and veggies without potatoes since the spuds take the longest to cook through.

Can I make this in the oven instead?

Yes. If you don’t have an air fryer, you can roast sausage and vegetables in the oven for the same effect!

Line a baking sheet with foil for easy cleanup, then spread the food in an even layer on top. Bake at 400°F for 30-40 minutes — use my other sheet pan recipes as your guide!

Ingredients
 

  • 2 bell peppers, 1 inch sliced
  • 1 large onion, 1 inch sliced
  • 1 pound baby potatoes, halved
  • 2 cups broccoli florets
  • 14 ounce sausage, 1-inch slices
  • 2 tablespoons Italian seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions
 

  • In a large mixing bowl, combine all the ingredients and stir till everything is well combined.
  • Place the mixture into the basket of the air fryer. Turn the air fryer onto 400 for 50 minutes. Halfway through, stir the pepper mixture. Check on the potatoes around the 45-minute mark; once they can be pierced easily with a fork, they are done. Depending on your air fryer, you might need the full 50 minutes or slightly less.
