Bring the water, sugar, vanilla and cinnamon sticks to a boil, stirring occasionally.
Chop the pineapple, strawberries, and kiwi into bite-sized pieces and add to a large bowl with the rest of the fruit.
Remove cinnamon sticks from the cooled simple syrup and pour over the fruit. Then toss gently and serve immediately.
