Rattlesnake Bites Recipe (Texas Roadhouse Copycat)
Ingredients
- 2 cups pepper jack cheese, shredded
- 3 jalapenos, seeds removed and finely diced
- 1 cup all-purpose flour
- 2 eggs
- 1/4 cup milk
- 1 1/2 cups fine breadcrumbs
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- vegetable oil for frying
Instructions
- In a bowl, combine the shredded pepper jack cheese and diced jalapenos. Mix well.
- Shape the cheese mixture into small balls, about an inch in diameter. Place on a tray lined with parchment paper and freeze for about 30 minutes to firm up.
- While the cheese balls are freezing, prepare three separate bowls for the breading process. In the first bowl, place the flour. In the second bowl, whisk together the eggs and milk. In the third bowl, combine the breadcrumbs, cayenne pepper, paprika, salt, and garlic powder.
- Heat the vegetable oil in a deep fryer or large pot to 375°F (190°C).
- Remove the cheese balls from the freezer. Roll each ball in the flour, then dip in the egg mixture, and finally roll in the breadcrumb mixture until fully coated.
- Fry the cheese balls in the hot oil until golden brown, about 2-3 minutes. Do not overcrowd the fryer - work in batches if necessary.
- Use a slotted spoon to remove the bites from the oil and drain on a paper towel-lined plate.
- Serve hot with your favorite dipping sauce, such as ranch or blue cheese dressing. Enjoy!
Donna's Notes
The seeds and membranes of jalapenos hold most of the heat. For a milder flavor, remove them completely. For a spicier kick, leave some in.
Freezing the cheese balls before frying helps them to keep their shape and prevents the cheese from leaking out into the oil.
When frying the bites, be careful not to overcrowd the pot. This can lower the temperature of the oil drastically and result in bites that are not as crispy.
If you don't have a deep fryer, you can also use a deep, heavy-bottomed pot for frying.
Be sure to monitor the oil's temperature during the cooking process. If the oil is too hot, the bites will burn on the outside before the inside is fully heated. If the oil is not hot enough, the bites will absorb too much oil and become soggy.
You may want to wear gloves when handling the jalapenos as the oils can irritate your skin.
These bites are best served fresh, but if you need to reheat them, do so in the oven to maintain crispiness.
